cooking classes

well i have teased you for months and the time has come. . . cooking classes are up for sale!  there will be two a month from may through october.  the first class of the month will be held on the first tuesday of every month.  the second class will be held on the third thursday.  class size is limited to 15 people.  here are the details, yo!



Take a cooking class with Anna Clements and Elle Lien, two cooks with the same focus of creating simple, seasonal meals.

Elle is the chef and owner at Daily Grub, a locally sourced, whole food diner. Anna is the farmer and owner of Clementine's Produce and Provisions and a primary grower for Daily Grub.

Taking inspiration from what's fresh at Anna's farm each month, classes include recipes and cooking instruction for six meals with suggestions for adapting them to any diet. A seventh recipe for preserving that month's produce is also included in the class.

Each month's class is different. No recipes will be repeated. 

At the end of class we'll sit down with tasting plate of the recipes featured that month. Feel free to bring a beverage! 

Classes begin at 6 pm and are held at Daily Grub, located on the corner of 20th and Pierce.

23 flats later . . .

today was our first tuesday where all the interns worked together and it went really well.  taylor, marcia, and caitie all met each other, ate lunch, committed to their schedules, organized the seed, and planted 23 flats of seed.  in three hours.  we, four, are going to get a lot of sh*t done this spring & summer. 
yesterday, i spent the morning at the heart ministry center on 22nd & binney in omaha.  check out their site for more information, but basically they are a fantastic neighborhood center that supplies food, clothes, healthcare, and case management to the less forunate in our community.  this area of omaha has some of the highest rates of obesity, as well as, the highest rate of people not knowing where their next meal is coming from.  to put it simply. . .fresh, whole food is not accessible here.  the nearest grocery store is at least 5 miles away.  transportation is a huge issue here.  when i asked john, the executive director, if they had the use for fresh produce and if they had a way to store it, i was told yes and they don't need to store it because it will be gone the day it comes in.   the center serves 450 -500 people a week.  we plan on bringing veggies on wednesdays when we do our restaurant deliveries. we hope to be able to provide enough veggies for 50-75 families a week.  in addition, i will be teaching cooking classes to the women of the pathway program.  the idea is to teach fast, easy, & cheap ways to cook dinner using fresh, whole food.  we are grateful for this opportunity to make food accessible to a small part of our community.  so, that being said, if you'd like to sponsor the patch of the farm that will be growing veggies for the heart ministry center, send me an email at clementinespandp@gmail.com

whoo hoo! it's getting to be that time!

there are so many exciting thing happening at the farm this week, i can barely contain my excitement. 

our subscription deadline was on monday and boy did you people come through! 

we also have three more potential restaurant/grocery store clients! `

elle and i secured our west omaha location for the cooking classes.  starting in may, we will be offering a cooking class, one tuesday a month, at the heartland cafe in elkhorn ne.  those will be going up for sale next week.  in addition, we will be offering second cooking class at a TBD downtown/midtown location.  look for details soon!

my recipe for sausage, bean, and kale stew was a contest winner on one of my most favorite blogs, dinner a love story!  i won a $75 gift certificate to Allmodern.  all clad french skillets, here i come.

marcia, one of our interns, will also be nannying for us this summer.  she and hendrix met this week and they got along famously. thank the lord for wonderful nannies!

thanks to great advice/support from great people, clementine's p+p is going to hopefully have the chance to donate surplus veggies to organizations like the heart ministry, sienna francis house, and a local women's shelter.

this year is going to be our year and i can't wait to share it will all of you! xoxo

2. we have hired our interns for this year and could not be more excited to work with this group of women.  caitie, marcia, and taylor are going to be awesome!

3. seed catalogs are still coming in the mail and maybe some of you are planning on doing a garden this year.  mike can come help you get the ground ready. details here.

books and accessibility

i recently read a post on friend of a friend's blog that said, "61% of low income families have no children's books" and i was absolutely stunned.  i can not get that statisitc out of my head.  this stat comes from beverly todd of the midlands literacy center in omaha.  i volunteered with the literacy center about 5 years ago and my student was 50 years old, employed, drove a car, white, a mother, and owned her own home.  and she could not read a dr. seuss book.  illiterate is not what most people think of when they read the description of my student.   i am happy to say when we were done she knew the difference between there, they're, and their.  i know that it took a lot of courage to admit she couldn't read and even more to LEARN to read.
back to this stat about 61% of children in low income families do not have their own books.  it absolutely breaks my heart and baffles me.  books are so much a part of our home that hendrix is currently quoting from too many cats. his birthday party theme is from the very hungry caterpillar by eric carle.  he has been read goodnight moon at bed time since he was 2 weeks old.  we go to the library as much as we go to target.  i rely on books to entertain, as much as, i rely on music, toys, pbs cartoons, and the dogs. 
i don't think low income families make the conscious decision to not buy books and read to their children.  i know they have other things happening. but i also know that i and you can make a difference by making a donation to our literacy center and encouraging our children to read with us.  i think for hendrix's birthday the other theme is that he and i will go donate some new books at the literacy center.  it is never too early to teach that it is better to give than receive. if you would like to join me, i suggest making a stop at jackson street bookseller's children's book section. . .they have great ones in great condition. . .perfect for donating and adding to your own collection.

to do lists

okey dokey.  it's monday.  it is sunny and cold.  and i have a TON of stuff to complete.  so here is a list of stuff i think you should know about. . .

1. my soon to be 2 year old no longer naps.  not because i wanted it to happen either, non parents. turns out, you can't make toddlers sleep.  however, quiet time is required in the household. so he is currently in his bedroom becoming one with himself.  while, singing into a microphone.

2. my sister-in-law, magali,  is a professional ballerina and will be performing this weekend.  you should go and get cultural. here's where you can get tickets.

3. we are so very lucky to be finding some wonderful women to work with us on our farm this year. 

4. i  heart valentine's day.  i don't know why, but i do.  i am printing these stickers out and putting them all over the fruit for valentine's day.  don't tell mike! *wink*

5. don't need a veg box because you have your own garden?  or you are planning on trying it yourself this year?  that is AWESOME.  seriously.  america would be a better place if there were more gardens.  if you don't have a tiller and don't want to spend the money to buy or rent one. . .mike will come out and till it up for you.  it's $40 for 500 sq. feet and an additional $5 for every extra 100 square feet.  tilling really prepares the ground to grow some awesome veggies.  email us at clementinespandp@gmail.com.

6. this is why moms are awesome. . .my grade school classmate, jenny plog timperley, started PLaiD with her friend becki huether.  both women have a child with pediatric liver disease.  1 in 25, 000 babies are born with pld.  PLaiD provides support, raises awareness, and educate.  these women are an inspiration. 

7. i should of started planning our wedding months ago.  anyone know of any event spaces that are AVAILABLE sometime in october or november, accomodate 90-95 ppl., & let you bring your own food & drink?

lots and lots and lots of things

lots of things to tell you about:

1. clementine's p+p is now hiring seasonal interns. seasonal interns will have the opportunity to work on a produce farm for 10 - 20 hours a week. interns will learn about the daily operations, organic weed & pest control, organic fertilizers, growing a wide variety of produce for some of the best restaurants in omaha, and running farm stands. interns will be compensated for their mileage, receive a free weekly veg box subscription, and lunch is provided. email clementinespandp@gmail.com.

2. one of clementine's restaurant clients is putting out a cookbook! daily grub will be publishing a cookbook. ancho cashew cream, anyone?

3. you only have less than one month to sign up for your weekly veg box subscription. spring is almost here!

4. clementine's p+p will be offering cooking classes from may through october. we will be partnering with daily grub's, elle lien. the classes will offer vegan and meat recipes. the classes will show customers how to use all the seasonal produce to make quick dinners, as well as, ways to preserve produce. class size is limited, so sign up quick when we post them.

5. crop mob! in march, veg box subscribers along with others will have the opportunity to come out to the farm for a day of season preparation, food, community, learning, and drinks. look for the sign up email soon.

announcements

happy (soon to be) new year! what a great time to sign up for a veg box subscription or provision subscription (menu+grocery planning) *wink*

this site will be undergoing some changes in the next few weeks. for example, it will actually be a website as opposed to a blog. hopefully, it will be more user friendly. expect recipes, pictures, harvest calendars and more. since, some of the blog posts this year were more family related . . . i started a new blog. . .you can check it out here. i do hope you will continue to check out both sites.

clementine's p+p will be partnering with some people in the upcoming year. we are really excited . . .look for details soon. all i can say is . . . chef taught seasonal suppers and cultural change through gardening

we made the news!

hello, all! i know it's been awhile but it has been a whirlwind around here. . .with the holidays coming & cars breaking down. sad face. but........we made the news! the reader gave their readers a heads up on our veg box subscriptions for 2011. check it out! (thanks, john!)

i believe during the holidays all people should try in the kitchen. you should get in there and make something delicious for your loved ones. food is love. there's probably a lot of therapists and dietitians out there screaming at the statement. . .but i think it's true. and there is no greater way to show your love than by baking a cake. (disclaimer: moderation is key, blah, blah, blah, we'll talk about THAT after the holidays, people)
here's a couple of christmas table dessert ideas for you:
applesauce chocolate chip cake - i make this at least 6 times a year. so easy. so delicious. make it!
pere roux's cake - i have aspired to make this since i saw it three years ago. is this the year? we shall see.

vino + food = my fave

i love wine. i love food. i tell hendrix i love him more than cheese & wine. most of the time that's true. i know a bit about wine. more about food. however, i know nothing when it comes to the wine dinners that go on at the boiler room. the boiler room (lucky for us!) is one our clients. chef paul kulik and his staff are extraordinary at what they do. and now they do wine dinners (lucky for all of us!). this dinners are carefully orchestrated to allow diners to learn about wine, eat food that brings out the best in that wine, and to have an experience. i think everyone, including me, should celebrate the holidays and the arrival of winter this monday at the boiler room. here's the info. you need to know:

Monday, December 13th 5:30 p.m. – 10 p.m.
Martine Saunier is a legacy in the world of wine importers. Her much heralded and eponymous company was founded in 1979, not an easy time for a female to break into the wine industry. Martine built her portfolio around some of the biggest names in Burgundy and the Rhône, and many have found a home on the Boiler Room wine list.
Michael Solway is proud to be currently representing Martine's Wines. As a native of Chicago, he has spent the last 20 years representing some of the world's finest wine estates, including the famed wines of Chateau Rayas. He has visited nearly every wine producing region in France and is well-versed in regional food and wine pairings.
Michael is bringing to Omaha wines from Emmanuel Reynaud, who took over his uncle's estates in 1997. As a fourth generation winemaker, Emmanuel had tremendous shoes to fill taking over one of the Rhône's most venerated names. Reynaud is a lover of the grape Granache that dominates the make-up of his wines, and treats the wine in a fiercely traditional manner fermenting in cement tanks and aging in massive 100 year old 100+ gallon oak tanks called foudres.
Dinner will start with Gaston Rivière's often overlooked Cognac fortified apertif wine called Pineau de Charentes, a wine bursting with honeyed orange, bright fresh lavender and thyme, then finish with Vin Doux from Languedoc called Muscat de Lunel. The storied Château Tour des Farges' Muscat is plump with lychee and peaches yet races with a stoney minerality and acidity. And from the great winemakers Laurence Féraud and André Brunel, Michael will offer a delicious tank aged Côtes du Rhône mix of Granach and Syrah with focused red berry, and plenty of minerality.
Of course the food from the Rhône is legendary. The menu is still forming, but I'm sure that agnolade (a local lamb stew), roasted duck, aligot (puréed potatoes and cantal cheese), grilled steak and marrow, all scented with thyme and garlic begin to evoke the earthy majesty of the Camargue and southern France.
Dinner with pairing is $65/person before tax and tip.

veg box subscription

for the 2011 growing season, clementine's p+p will be expanding it's services to include providing weekly veg boxes to residential customers. any household can sign up to receive a weekly veg box that they can either pick up at our farm, at a midtown location (TBD*), or have delivered to their house**.




what you need to know:


our produce is grown on our family farm in gretna, ne by us. the produce is grown using only natural and organic practices. this farm is the original homestead of mike's great great grandfather, alfred brockman.



veg boxes will be ready weekly from may 2011 through september 2011 (22 weeks).




the sign up deadline is february 15, 2011.




veg box subscriptions are a commitment to the entire growing season and are not available on an as needed basis. meaning, by signing up you agree to pick up/receive veg boxes weekly from may 2011 thru september 2011 and to pay for the whole subscription (22 weeks).


the cost is $7.50 per person per week. ex: if you have four people in your house, the cost would be $30/week ($660 for the season) . however, if a 4 person household believes they only go through enough veggies for 2 people they could choose the option that cost $15.00/week ($330 for the season) . this will give customers the option to receive only the amount of vegetables they will go through in a week.


customers will also have the option to opt out of certain vegetables. don't like brussel sprouts? just tell us and you'll never see them in your veg box.


a 20% deposit is required at the time of signing up and you must pay the entire balance in full by march 31st. households that pay for their veg box subscription in full at the time of signing up will receive a 10% discount.


payments can be made on this website using the paypal option or by sending a check made out to clementine's produce and provisions, at P.O. Box 312, Gretna Ne 68028.


the veg box subscribers will have the opportunity to celebrate with us by visiting the farm during planting season and with a year end potluck harvest supper.


interested and future subscribers can leave a comment or email us and we will send you the subscription form.

*the exact location and pick up time has not been determined for the midtown picker uppers. there will be one and we will send subscribers information by the end of 2010.


**there is a $25 per week delivery charge. for instance, a family of four that wishes to have their produce delivered would pay $55 per week ($1210 for the season).

more gift ideas

1. check out my friend, cami's, etsy site. she sells her prints. better yet, hire her to come take pics of your kids (human or animal). mike and i have hired her to do hendrix's pics twice (look at this beautiful photo). she often runs a $75 photo shoot special where she comes to your location, takes the pics, and provides you with the disc to print the photos. your momma would just love a family photo for christmas!

2. hire a housekeeper for someone special. my soon to be sis-in-law, melinda, has her own house cleaning business. and she is GOOD, folks. super thorough and affordable. email her at smells like roses (mpalubecki@cox.net). what a great gift for a super busy mom or a relative who doesn't get around so well, anymore.

3. give that special cook in your life a provision subscription or veg box subscription from clementines p+p. or both! provision subscriptions can help people stay within their new year budget and veg boxes can help people keep their new year's resolution of eating healthier.

And apples are everywhere so you must make a strudel to serve with a Sunday brunch! Enjoy!

in the upcoming months, clementine's will be hosting more free community craft nights. in october, i was thinking about doing a "snack 'n swap" party in conjunction with the community craft night. guests can bring 8-10 items (clothes, household items, accessories, etc.) they no longer have use for and a snack. guests will "shop" the others' items, eat snacks, drink wine and craft! november will bring a quick & easy holiday cooking "class" in conjunction with craft night. hopefully, we can all get some ideas for holiday potlucks and holiday dinner sides. finally, in december, i was hoping to host a holiday cookie swap. what do you all think? would you like to participate in some of these events? let me know and enjoy the rest of your week. xoxo.

do you see what i see?

do you hear what i hear? that's the heavens opening up and angels singing because it is. . .almost the end of summer!
i know, i know, i'm a garden farmer* so i should like the spring and summer because it the growing season. but i am also a baker and a cook who longs for apple pie and short ribs over polenta with roasted brussel sprouts.
the angels are also singing because i successfully set up a paypal payment option on the blog. see it over there on the right hand side of your monitor!?! which means that you all can now order produce or subscribe to our meal + grocery planning and pay for it using paypal! this is an especially momentous occasion because i can be particularly stupid when it comes to technology. i know i am a "blogger", but that doesn't mean i know what i am doing. (that's the great thing about blogging, no one know what they are doing.) this paypal button is going to be so awesome for you and us!
which brings me to our next order of business. . . since school is starting, labor day weekend is fast approaching, and fall is almost here. . . we are having a

crafting, canning, & coordination

well, it's monday and it's not hot. so i'm happy. tomorrow is the first farm craft night and i am so excited to hang with fellow crafters, i can barely stand it. we will be crafting under the walnut tree behind the house with citronella candles glowing and the sun setting. (barring rain, of course) next month, i am going to host a craft night/home canning class in one. details to come soon, but it should be a great time. i'm off to clean and make my house semi-presentable. semi-presentable because i have a 16 month old, 5 indoor pets, and live in a house that constantly has a project happening to it. check out the changes to the website and let me know what you think! peace!

popsicles and smores!

this weekend & next week are supposed to be HOT! real hot. i'm not looking forward to it. so i got to quick get all my housework done while it is still cool. now, i want everyone to go buy popsicle molds at at target this weekend. or make your own out of yogurt containers and those cute sticks. side note, if i was getting married in the summer i would totally serve popsicles at my wedding. with cute messages of love printed on the sticks. which is where smores come in. . .i am having smores at my wedding. and my friend, summer of orange poppy baking company, makes handcrafted artisan marshmallows that are going to go into smore kits for everyone. so there's another thing i want everyone to do. buy some marshmallows from her and make a smore*. the apple pie marshmallow changed my life. now here are some popsicle recipes!

minty berry pop:
1/2 bag frozen berries
1/2 c. lowfat plain yogurt
1 1/4 c. lemonade
1/3 c. chopped mint
generous squirt of honey

blend together, pour in molds, wait a few hours, and enjoy!

watermelon mint pops:
2 c. watermelon
1/2 c. chopped mint
1 T. sugar
juice from 1/2 lime

blend together, pour in molds, wait a few hours, and enjoy!

coco loco*
1 13.5 ounce can unsweetened coconut milk
1 c. chopped pineapple-1 ripe banana, lightly chopped
1/2 tsp. ground cardamom
1/2 tsp. ground nutmeg
A few grinds of fresh black pepper
A few fresh mint leaves

blend together, pour in molds, wait a few hours, and enjoy!

virtual farm stand

alright, folks! the eggplants are growing, the four kinds of tomatoes are ripening, the hot peppers are getting spicy, the beets are ready to be pulled, and the carrots are ready to be gingered. . .



veggie prices and descriptions:

japanese eggplant: smaller and more slender than your typical eggplant this beauty has a sweeter, more delicate flavor. the skin is much thinner than its italian counterpart. really versatile. 2 for $1.50

scarlet prince beet: bright color and buttery texture make these beauties great for roasting. but they are even great shredded raw in summer salads. $3/bunch

beefsteak tomatoes: this is the "summer tomato lovers" tomato. big, juicy, and big. great for those blt's. $1/ea.

mr. stripy tomato: yellow striped tomato that i have fallen in love with. such a beautiful fruit to make salad with. they get very big and taste great. $1/ea.

cherokee purple: omg! these are so damn pretty. they have a unique dusty rose color that will break your heart. pair that with mr. stripy and some fresh basil. whoa, mama. wonderful sweet flavor. $1/ea.

roma tomato: this is the one you need to stock up on and make your marinara with. or can with.* a homegrown roma is so fantastic in flavor. 2 for $1

danvers carrots: this is the basic homegrown carrot, people. except that there is nothing basic about a fresh carrot. they are like candy and addictive. $3/bunch
