{semi} vegetarian slow cooker meals

as promised, here are some {semi} vegetarian options for the slow cooker and don't forget about the stuffed black bean peppers on the top ten slow cooker recipes for parents file. i'll come back next week with some easy variations on the meat heavy slow cooker recipes i have already shared.  this week has been a little crazy with preschool field trips, volunteering, and now my poor MIL broke her hip.  please send her lots of good vibes today.  her surgery is later today.  however, i do want to say THANK YOU to all of you nice folks who left wonderful comments, started to follow this blog, and shared the top 10 file. it really made my week.  of course, thanks to JENNY OF DALS, too.

my favorite potato soup

vegetable + chickpea curry (i have not made this yet, but my friend does and i eat it.  so good!!)

eggplant stew (tips: i do not use porcini shrooms.  i use portabello because i can just chop and throw them in the slow cooker.  also, i don't precook my onion because i am not making extra dirty dishes. finally, i throw in some spinach towards the end of cooking. )

black bean enchiladas (turns out more like a casserole, but delicious)

refried beans (fricking brilliant and can be frozen.  thanks to andrea for pointing these out to me.)

white bean +  collard stew (so fricking good with the sausage, but you can easily omit or add in a "healthier" sausage")

  2. thank you so much for following up on this for us and sharing these vegetarian options! {semi-vegetarian :)... which is fine by me, since i do eat meat!} about to go through them now, and i cannot wait to dig in- to both these- and the ones in the file. adding your blog to my reader now! (i'm sorry to hear that your mil is having a rough time... i hope she starts to feel better very soon)

  3. the apple pie oatmeal was delicious. a much-needed way to switch it up... and SO easy. the white bean & collard stew is in the slow cooker now! (can you tell i was in major need of cooking inspiration? been in a bit of a 'rut' for the past couple of weeks- and very short on time- which partly explains the rut :)... so i'm so happy to have found you (and so happy that we'll be having a good home-cooked meal tonight).

    one question- do you add salt beforehand or wait until the end? i know it says to wait, but just curious what you do, since these are dried beans.

  4. i salt afterwards. i have found salting beans beforehand can sometimes make them a bit chalky. so glad that you enjoyed the oatmeal. let me know how you enjoy the stew! xo!

  5. the soup was very good! the only change i'd make is that the sausage i used (chicken andouille from trader joe's) was pretty spicy. i doubled the recipe and after frying up a tiny bit beforehand (to test the spice level), i decided to use less meat than called for- 12 oz. package instead of a lb. ...but still came out too spicy to give to my youngest... but my husband, & i loved it- and my son was able to handle it! also, i didn't soak the beans beforehand, but i think i would next time, as they took quite a while to cook through.

    so happy to have TONS of leftovers for the remainder of the week :).

  6. ha! torrie, i've used that sausage and it was very spicy. i've used beef kielbasa before and that was very good. also, to make it go even quicker i've used canned beans that i drained and rinsed. glad you enjoyed it!
